Crock-Pot Chuck Roast

A slow cooked Chuck is a classic roast to serve the whole family for a nice dinner. But instead of making it in the oven, it's easily prepared in the crock-pot by just mixing all the ingredients together and letting it stew for a few hours until ready to serve. The meat and vegetables still need to be braised beforehand, but it honestly couldn't get any easier. It ends up being tender, fall-apart delicious, warm and satisfying to serve.

Ingredients
1 Chuck Roast (mine was 3 pounds)
2 tbsp steak seasoning
1 tbsp kosher salt
1 tbsp dried thyme
1 tbsp dried rosemary
2 tbsp Olive oil
1 lb Carrots. (5-6 med. carrots). Peeled and cut into large chunks.
2 lb Potatoes. Peeled and cut into large chunks.
1 Onion. Peeled and cut into large chunks
2 Celery stalks. Cut into large chunks (optional)
1 Cup Broth. (Beef, chicken or vegetable)
1 tbsp corn starch or potato flour or AP flour

Instructions
Combine seasoning mix into a small bowl. Set aside.

Coat both sides of meat with a third of the seasoning mix.

In a large skillet over medium-high heat, drizzle in some olive oil and sear both sides of the meat.
Transfer meat to the slow cooker.

In the same large skillet, drop in all the vegetables.
Drizzle on some more olive oil to coat vegetables.
Sprinkle on the remaining seasoning mix.
Sauté vegetables on med. heat for about 5-10 min. by stirring occasionally.

Transfer the vegetables to the top of the roast in the slow cooker.
Pour in the beef broth.
Cover with lid.

Turn on Crock-pot to high for 5-6 hours until fork tender.

Transfer meat to serving tray.
Take out vegetables and plate around meat.

Gravy
Making the gravy is an important step so don't skip this last part.
Take all the left over liquid from the crock-pot and place in a saucepan or small pot.
Whisk in the cornstarch/potato/flour (add a few tbsp water).
(Don't mind if it's still lumpy, we'll take care of that shortly)
Simmer until you've reduced the liquid. (25-50% reduction)
Pour the liquid through a sieve directly onto the meat or into a gravy boat.
